Chef Michael Steh Takes Bronze!
Chef Michael Steh takes Bronze at the 2011 Golf Medal Plates with his dish "Bacon". Steh's three components were all inspired by bacon without actually containing any: deep fried brioche with scallop mousse and smoked duck breast; onion and cheddar soup topped with apple touille; and eggshell filled with "coconut bacon", Riesling jelly and soy-lavendar custard.
